On My Mind, episode 11: summer plans

I don’t do a lot of journal entry type posts here, but there are some things going on that I just wanted to share. Sometimes there is no specific topic; it’s just about life in general.

This weekend, I was very excited to get a shipment notification from Baubax, which I backed on Kickstarter back in September. I had hoped to get it in time for Thanksgiving. So much for that! They originally anticipated being able to get them completed by November, but their campaign exploded way beyond they ever expected. The product is a travel jacket, which they designed 4 of. I chose the red bomber jacket because it seemed like a nice balance between dressy and casual. I hope it fits me well!!

Panda and I have been looking for someone to rent a room in our home. His organization has interns that will be coming next month and they always need a place to stay. There are a few students we’ve considered and I look forward to finalizing details. We’re happy to earn some extra money to help fund my MBA. I’ll be leaving halfway through their stay to get ready for my program. Things are going to be crazy the next couple of months! Maybe in the future we can consider listing a room on Airbnb.

About a month ago, Panda and I went out to dinner with Calavera for cajun seafood. As I was cracking away at my crab legs, I didn’t realize I was weakening part of my tooth and on the drive home, I noticed that my tooth had chipped. Prior to that, I had noticed a tiny little indentation along the bottom of the tooth, so it must have fractured along that groove. I needed a teeth cleaning anyway, so I scheduled a dental appointment and was told I should get a crown. Since dental procedures are expensive in the US and I plan on going to China this summer, I decided to wait until I go there to get it done. In the mean while, I look silly sometimes with what looks like a gap in my teeth that then shows itself as a missing chunk. At least a gap would look normal!

Now that I know what program I’ll be attending in the fall, it’s all about getting to know what they have to offer. I received a call from an MBA Ambassador today, but I was working and then wasn’t able to reach her later. I’m compiling questions about the program, life in general, and other things to know before I start school. There are four more people I should reach out to (two friends and two ambassadors, one who interviewed me). I think I’ll learn a lot at Admit Weekend next week and I can’t wait to start meeting people, learning, and thinking about what I’ll do. All this looking to the future has me distracted from what I should focus on, but I’m still making good progress at work. Still, I’m itching to train someone up and start handing things off, though it looks like that won’t happen for another month.

I’ve always been interested in helping uncover resources and make them more readily available, so I created an unofficial employee handbook using Trello. Tomorrow I get to train a new girl on it for the very first time! I can’t wait to see what she thinks, get feedback, and hone it into a lasting legacy that I will leave here. I’ve got quite a few projects that I hope will continue to live on when I’ve moved on. I know that our use of Slack will certainly be one of those.

There are so many things buzzing around in my head these days. With my obsession with Trello, I’ve put together various boards to help me track everything I should be doing. Now I just need to get better at checking them… 😛

Happy Leap Day!

I know it’s not a true holiday, but it sure feels like it should be. Today was one of the quietest days at the office, with a surprising number of people leaving early. Tomorrow are primary elections so a lot of kids are home and it’ll likely be another quiet day at the office.

In the future, I hope that I’ll be at a company where we can celebrate Leap Day by encouraging people to get one more day of trying something new. I mean, it’s only once every fortyear…

I celebrated with a colleague by taking advantage of Melting Pot’s $29 4-course deal. We saved over $10 each! It was great to slowly enjoy our meal and chat about all sorts of random things. Wouldn’t it be nice to get an extra day here and there to enjoy quality time with others?

A soufflé dining adventure

While in Paris, Panda and I were looking for a popular and special place to have dinner. With much searching, he came across Le Soufflé – offering a completely soufflé experience. They had a three-course meal that was all soufflés!

We eagerly walked there after a long day of exploring and stepped inside to a cozy little entry. A gentleman approached and asked if we had a reservation. We did not, so we wondered what the wait would be.

“I’m sorry, we are booked for the rest of the evening,” he told us.

“When’s the next time you have an opening?” we inquired.

“All reservations for the night are taken,” he explained. “You can make a reservation for tomorrow lunch.”

Disappointed, we stepped out and considered our options for our meal. It was past 9 and many restaurants were closing within the hour. We returned to the hotel to get online and search for somewhere else with soufflés.

With little success, we went to ask the concierge. He immediately recommended the restaurant we had been turned away from. We started telling him how they were booked, but he was already dialing their number. At first it seemed like they might give us a reservation, but then he started shaking his head. Fully booked. :-/

So he began calling a variety of other options asking if they at least served dessert soufflé. Finally, one place said yes – but it was not walking distance and we did not want to take a taxi. So as things looked more and more dismal, I was about ready to just eat at the hotel. Then, out of the blue, the concierge tells us we can go to Le Soufflé!

What?! We were confused. Apparently he had called them two more times and they had a cancellation, so we got in! We quickly rushed over the half mile or so to the restaurant and arrived aright round 10.

At first we planned on getting a set each, but upon seeing the size of the soufflés, we decided to share a single three-course meal. It was 37€ so we were happy to save on the cost too.

We began with bread, butter, and water included in the meal.

The appetizer soufflé was the artichoke haddock, with pieces of both. It was very savory with that fish taste and a slight hint of tartness from the artichoke.

The side salad came with the first course.

Our main course was the chicken and mushroom. The chicken gravy came separately and we poured it bit by bit as we ate the soufflé. It reminded me of a chicken pot pie (which I had been craving) with a soft, fluffy top rather than a flaky crust.

And to wrap it up was a classic chocolate soufflé, which came with a chocolate sauce to pour in. There was a graininess to it that I quite enjoyed. It was very sweet!

This was a fun dining experience and the meal felt very satisfying, even with such light food. I think ait’s  great thing to try for anyone new to the city. 🙂

We went for the steak first and I found that I really like roasted tomatoes!

Then it was time to try a recipe by Emeril.

Pretty simple meal with minimal ingredients, but a bunch of flavors.

I like fish and rice, so this was good. I probably would try more veggies though.

Finally, it was tortilla soup time. I’m a fan of soup and the taste of chunks of avocado inside.

Soup is fun since you get to throw a bunch of things in the pot. Forgot to take a picture of the final product, which was a little more watery than I would have wanted.

Apparently there’s a show so that’s why one of the recipes was Emeril’s.

All in all, solid dishes that I’d tweak a little do my own thing with. I’ve already done more roasted tomatoes, since they’re so simple and I quite enjoyed that.

I don’t browse Facebook much anymore, but when I was a few weeks back, I saw an ad offer for Home Chef. For $30 off, I was totally willing to give it a try! Their soba dish caught my eye since our recent one from Hello Fresh was soooo good.

Home Chef is just under $10 per serving and comes with your choice of up to 8-9 meals of 2-8 servings each. They also offer a breakfast option as well as fresh (seasonal) fruit. Shipping is $10 for orders under $40 and free for orders over that. Boxes are sent weekly unless you choose to skip (which is very easy to do). They offer a referral program that gives $30 off to both the person you referred and your next order.

Our very first meal from the box was Panda’s choice. He loves Mexican food!

Cooking the steak to our liking was the hardest. Panda also hurt his fingers cutting the jalapeno.

The meat and salsa were yum! I liked how the salty beans and the more bland rice blended for a base. I wish the rice absorbed more flavor from the spice though.

Next up was something lighter.

I’m so proud that Panda pretty much made this all on his own. I just had to help with making sure the chicken didn’t stick to the pan.

I was surprised at how soft and juicy the chicken was and that the bok choy slaw was to my liking. Nice!

Oh yes, loving these ingredients. I’m totally shaving more cucumber like that in the future.

Delicious, just as I hoped. I’m a fan of this recipe.

Finally, we felt this was a fitting lunch for the weekend.

Panda took charge again and did most of the work for this one. I helped with a few tasks here and there.

This actually turned out to be way more filling than we expected. I totally want to make our own potato chips now.

As you might have noticed, we opted for four dishes this time. What I like about this subscription is the flexibility in adding as many as you want, and even having the option for a breakfast recipe as well as getting some fruit to supplement your meals. I’ll definitely keep an eye on their recipes and order again the next time I like the upcoming menu.

Here’s the first set of meals I got upon returning from the break. I tried a mix of new and old dishes for the first time, now that I’m starting to get familiar with some of the options.

Mushroom & Beef Bolognese over Spaghetti Squash

I like beef bolognese and I was curious about the spaghetti squash, so I got this dish.

I like the flavors, though I would have liked either more food or spaghetti squash that was thicker so it’d feel more hearty.

Chicken Enchilada w/ Cauliflower Rice (SPICY)

You know, they say dishes are spicy but I never feel they are.

I quite liked the wraps they used and the sauce gave it good flavor. The cauliflower rice was a lot more ground up than I would have preferred.

Turkey Pot Pie (reorder – see the original review)

I feel like this time around the portion size was a little better, though I could still go for more! I like this and will probably get it again.

Thai Chicken Curry w/ Jicama, Carrots & Green Beans

I’ve found I gravitate towards dishes with rice, zuchinni, or carrots.

This was a decent meal. I could have gone with a bit more curry and thinner slices of jicama and carrot.

Blackened Mahi Mahi w/ Herbed Mashed Sweet Potatoes & Sautéed Kale (reorder – see the original review)

 

I ended up sharing this with Panda because I decided I didn’t want to eat it anymore. I still would consider it again, but maybe not the next time I see it.

The week we went off to the holidays, it was a short one so they only did a delivery that Monday. The Thursday that week was already Christmas so there was no second delivery and it became a 3-meal week, which worked out since we left Wednesday anyway.

I have no idea what tagine means, yet somehow I decided to try this dish because of the name.

The salad was decent, but I’ve found I’m not much into their style of salads. I’d rather have more veggies and stronger dressing.

Roast Beef Brisket on Gluten Free Almond Bread w/ Apple Sauerkraut

This intrigued me because of the sauerkraut.

I think I got a poor cut of meat – it was all tendon-y or something. I cut out quite a bit because it was difficult to chew. If they had softer meat, I might try this again.

Cuban Pulled Pork w/ Mexican Spiced Carrots & Parsnips

I’m always willing to try pulled meat, since it’s likely to be more of the texture I like.

I liked the meat, but the veggies were a bit too crunchy after awhile. Not too much flavor either.

We’re starting to see repeats of the dishes from the first week so it looks like they’re cycling through the meals every 5 weeks.

Chicken wasn’t super tasty, but the dressing gave it a bit more flavor. I liked the carrot salad – crunchy and tangy.

Jerk Chicken w/ Garlic Spinach, Brown Rice & Coconut Sauce (NEW)

I forgot a pic of this after I microwaved it. It didn’t stand out as particularly good or bad.

Garlic Baked Cod w/ Tomatillo Dressing, Spinach & Herbed Mashed Sweet Potatoes

Grabbed this one for lunch during a meeting.

I enjoyed the cod and the tomatillos were nice and soft. I didn’t end up eating the sweet potato mash since it was kind of sour.

Beef Stew w/ Braised Root Vegetables

A coworker had extras so I decided to try this one out.

All quite tasty, but far more meat than I prefer. I cleaned up the vegetables!

I took this home to eat over the weekend.

I really liked the salad. The frittata turned out to be a bit too heavy for my taste, but with the salsa it was more refreshing.

Spring Turkey Salad w/ Green Beans & Dried Cherries

I gave this to Panda to eat for lunch and he loved it.

I will be ordering this again the next time around so maybe I can try it. If not, at least I know it’ll be enjoyed by someone. 🙂

Power Supply Week of Dec 8 review

At our office, we started ordering Power Supply for our meals. My company helps subsidize the cost and it’s a whole lot easier than going out trying to figure out what to buy! I’ve enjoyed not feeling limited to the restaurants within walking distance and not even having to step outside into the cold. Ok, so here’s how it works: you can choose 3, 5, 6, or 10 meals per week. If you go with the 3- or 6-meal plans, they are delivered for pickup on Mondays. If you go with the 5- or 10-meal plans, the first 3/6 are delivered on Monday and then the remaining 2/4 are delivered on Thursday.

There are three sizes: boost (small for snacking or sides), standard (for most normal people’s portions), and XL (for those massive eaters who can’t get enough). There are three breakdowns: mixitarian (meats, veggies, some grains and legumes), paleo (“cave man” food – meats, veggies, fruits, nuts), and vegetarian (well you know, vegetables only). And then there’s the option of lunch and/or dinners: lunches are meals that are easier/faster to eat, sort of like grab-and-go, while dinners are meals that are slower and generally require silverware to complete the task. Portion sizes do not vary between the meal types, so you can freely swap between any of them on a given week (though you can’t get meals slated for Thursday delivery on Monday delivery). Pork and fish are only available on Thursday deliveries, so you’d have to get the 5 or 10 meal plan for those.

Does that all make sense? Basically they’ve made it veeeery flexible to get what you want. It’s easy to “mod your meal” as they say. 🙂

Turkey Pot Pie

The very first one I go for is the Turkey Pot Pie.

I loved it! I wish there was more though… but it did fill me up for a good 5-6 hours.

Cinnamon Ancho Beef w/ Acorn Squash & Chocolate Pana Cotta

Somehow at least 7 of us in the office all decided to 1. get this meal and then 2. eat this meal on Tuesday!

The beef was fantastic and I liked dipping it in the sauce. The squash was not as soft as I would have liked and the pana cotta was an odd sort of chocolate pudding (good enough to eat the whole container though).

Citrusy Chicken w/ Oyster Mushroom, Broccoli & Cauliflower Fried Rice (NEW)

I wasn’t too sure about this so I put off eating it earlier in the week, but I liked it.

Surprisingly, I ate the broccoli completely. The only thing I didn’t eat was the peppers.

Thursday came with a fresh delivery and my fish dish!!

The blackened mahi mahi was the reason I went for the 5 meal plan. I also happen to like kale and sweet potatoes! The fish was very black peppery, which I love.

Vanilla Maple Glazed Pork w/ Sautéed Spinach, Tomatoes & Brown Rice

And then came the pork dish, which a sweetness that the rice helped balance out. This dish was ok and I totally forgot a picture when I removed the lid.

October anniversary

Today Panda and I celebrated our official 6th year together. It’s the first time our anniversary has occurred in October (because it’s the Friday of Zero Week at UCLA), which certainly felt weird. Usually it falls on the last or second to last Friday of September! I had a really busy day at work and tried to leave early, but barely made it out on time. We had our reservation for The Melting Pot at 6 and met there.

Then it was time for the entrees. I got Pacific white shrimp and he got Atlantic salmon.

I love the way Panda wraps gifts. He always finds some cute piece of paper from an ad or something at home and uses that. This time he carefully chose this design from a calendar! The sides were taped with fun cartoon stickers.

I wanted to get the current limited edition chocolate fondue with white chocolate, peaches, and almonds, but Panda was full and didn’t want to stay for another course.
